Pizza Frittata



Snow day!

I know I sound excited. I’m not really. Come on guys, its March already. I am ready for flowers and song birds. But if you don’t have what you want, be happy with what you have. Right?  So, I will have a good attitude about this snow day. I took advantage of a very lazy Sunday morning by sleeping in and making our breakfast for lunch.

I’m only so-so on egg dishes. I have had frittatas before and never really cared for them. I don’t like omelets often either. This never stops me from trying to like them. Still not really my thing, but everyone else really liked breakfast/lunch today.


Pizza Frittata
7 eggs
2 TBS water
½ tsp pizza seasoning
1 TBS butter
½ TBS olive oil
¼ - ½ cup mixed vegetables of choice (ex. Onions, green peppers, spinach, mushrooms)
¼ - ½ cup mixed cooked meats of choice (ex. Italian sausage, peperoni, ham, ground beef, crumbled bacon)
¼ cup mozzarella (optional)
¼ cup pizza sauce
Peperoni to top

1.       In a hot, oven safe skillet melt butter and olive oil.  Preheat oven broiler
2.       Add vegetables and pizza seasoning, sauté over medium, to medium high heat until the start to soften, about 5 minutes.
3.       Add cooked meats and mix.
4.       Whisk eggs and water. Pour egg mixture in pan and mix to incorporate.
5.       Cook over medium heat until almost done, time varies, about 5-10 minutes.
6.       Pour pizza sauce in little blobs all over frittata, sprinkle on cheese and place pepperonis.
7.       Place frittata under broiler for about 3 minutes, until top is slightly browned
8.       Allow to cool for a couple of minutes, then slide frittata from pan onto serving plate. (This can be tricky, and may require some help from a spatula.)
